Stuffed Star Prairie Farms Trout with Rick Kimmes (The Oceanaire Seafood Room)
A chef who has been preparing local seafood dishes since 2000, Rick will be demonstrating and sharing a delicious take on local Star Prairie Farms Trout.

Cured meats with Mike Phillips (The Craftsman)
A demonstration about cooking, preparing, and using cured meats, which offer Minnesotans a great way to use flavorful, healthy, locally raised meats throughout the year. Cured meats add zest, texture, and flexibility to many dishes

Pastured meats with JD Fratzke (The Strip Club)
Preparing and demonstrating how The Strip Club uses local, pastured meats to provide an array of flavors, styles, and choices for their customers.

Local Chevre, Pickled Ramps, Microsalad, Lemon Brown Butter Vinaigrette with David Jones (The Marsh Restaurant)
Presenting a dazzling array of Minnesota tastes, David will create a microsalad with local hothouse microgreens, a local goat chevre with an English pea terrine, and pickled ramps with a lemon and brown butter vinaigrette.

Latin Cuisine with Rachel Rubin
Building on her Peruvian roots, Rachel will feature Latin cuisine to start off Sunday's cooking stage. Get ready for unique, spicy flavors, uniting tastes of Minnesota and Peru.

Lake Superior Whitefish with Carla Blumberg (Chester Creek Café)
Capturing the flavors of northern Minnesota, Carla will create a dish featuring Lake Superior whitefish. Come around for a delicious dish with easily found local ingredients!

Carnitas Canapès with Mike Fuller (Chipotle Mexican Grill)
A demonstration of Mexican food, local foods style! Incorporating local pork and spicy salsas and sauces, Mike will show how to enjoy the spice of tacos with what Minnesota has to offer.

2 p.m. to
2:45 p.m.

Elk with blueberry and wild game sauce with Matthew Taylor (Wendigo Lodge)
Rounding out the local food cooking stage with some real Northern Minnesota cuisine: elk with blueberry wild game sauce. This will really highlight the exciting and unique culinary tastes you can find in local dining establishments throughout the state!

J&S Bean FactoryJ&S Bean Factory. Local and independently owned, we offer a variety of fair trade and organic coffees both in our store and wholesale to local coffee shops and restaurants. We even support independent farms who can’t afford the Fair Trade Organic certification, by purchasing their green beans directly. Locally, we promote independent ownership of farms and organic products through our work with the Minnesota Farmer’s Union.

Smokey’s Charbroiler. As you're outside enjoying the fresh air and exhibits, be sure to stop by Smokey’s Charbroiler located near the entrance of the Grandstand and try an organic, grass-fed-beef hamburger or Organic Valley hot dog/brat. Other items are available to satisfy your hunger.
